This Greek Chickpea Salad pays homage to my desire to travel to Greece someday.

I used to be a somewhat picky eater, but over the years, my palette has really expanded, and I actually crave the intense flavor combinations and Greek food. Sometimes, I enjoy this versatile recipe for breakfast, tossed with scrambled eggs…or as a main dish for lunch paired with whole-wheat pita dish…even a side dish for dinner – it’s the perfect make-ahead dish. With time, the lemon marinade flavors the chickpeas, bringing more depth and flavor.

Greek Chickpea Salad, What’s the Short-Cut?

Trader Joe’s is a magical place that never disappoints with its variety of unique sauce and dip options. Their  Tzatziki Creamy Garlic & Cucumber dip takes this Greek Chickpea Salad to the next level. Tradition Tzatziki has either a Greek yogurt or cream base, fresh dill, grated cucumber, garlic, lemon juice, and olive oil. Certainly, you could make your own, but TJ’s pre-made version is extremely convenient, plus equally delicious.

Greek Chickpea Salad

Ingredients

Scale
  • 2, (15 ounce) can chickpeas, rinsed and dried
  • 2 c. diced cucumber
  • 2 c. halved cherry or grape tomatoes
  • 1/4 c. diced red onion
  • 1/2 c. kalamata olives
  • 1 (4oz) container of feta cheese
  • 1 c. chopped parsley
  • 1 T. fresh chopped dill (optional- adds a lot of flavor)
  • 2 T. fresh lemon juice
  • 2 T. extra virgin olive oil
  • ½ c. Trader Joe’s Tzatziki sauce

Instructions

  1. Add all of the salad ingredients to a large serving bowl, except for Tzatziki sauce. Combine.
  2. When ready to serve, drizzle Tzatziki sauce on top of your salad.
