These healthy No Bake Gingerbread Bites are the closest thing to gingerbread cookies that my kids have been asking for. I’ve attempted gingerbread cookie making with the boys for the last two weeks. However, there always seems to be a uncooperative ingredient that throws a wrench in our plans…like the brown sugar that transformed into a brick. I guess it worked out in the end because we created a delicious “version” of gingerbread with a healthier twist.

A Healthier Sweet Treat Option

Not only do these no bake gingerbread bites taste like a gingerbread house, but they have a fraction of the added sugars of holiday cookies and include healthy nuts and fruit. I’m 100% on board with holiday cookies, but at this time of year, sweets and treats are at every turn. You know how it goes with kids and the holidays. Aunt so and so brings over cookies, the bank teller gives out candy canes, and the dinner guests bear peppermint Oreos. That’s just what happened yesterday

Add Some Seasonal Sparkle…

My sweet son was home “sick” from school to help me with these, so when I asked him if we should add some frosting, there was a resounding, “yes.”  We pressed the easy button with a simple frosting that included mixing: 1 cup powdered sugar, 1-2 Tbsp milk & a dash of vanilla + green food coloring. It’s amazing what a shower of sprinkles + frosting will to do a child’s enthusiasm.  Frosting or not, the almonds, pecans, dried dates, and spices are the stars of this recipe and make these energy bites an ideal healthy grab and go snack.

While I’m pretty sure these bites will fly out of the fridge, they will last up to two week. Or, maybe Santa would enjoy these no bake gingerbread bites on his cookie plate for a sweet treat that doesn’t spike and then drop his blood sugars over the course of Christmas eve?

Healthy No Bake Gingerbread Bites

Ingredients

Scale
  • 2 c. cashews, whole & salted
  • 1/3 c. walnuts 
  • 1/2 c. gingerbread cookies 
  • 1 c. dates (about 16 whole) 
  • 1/8 c. molasses 
  • 1 1/2 t. ground cinnamon 
  • 1/2 t. ground ginger
  • Pinch of ground cloves 

Instructions

  1. Add the nuts, dates and cookies to the food processor and process for 3-5 minutes until the mixture starts to clump together. 
  2. Add the molasses and spices and blend for one or two more minutes until ingredients look evenly distributed. 
  3. Using your hands, roll the mixture into desired “bite” sized balls. Store in the refrigerator. 

Notes

For a more festive bite, mix 1 c. powdered sugar with a splash of milk and vanilla and green food coloring. Dip bites into the frosting and garnish with sprinkles!
