Healthy No Bake Gingerbread Bites

Ingredients

Scale
  • 2 c. cashews, whole & salted
  • 1/3 c. walnuts 
  • 1/2 c. gingerbread cookies 
  • 1 c. dates (about 16 whole) 
  • 1/8 c. molasses 
  • 1 1/2 t. ground cinnamon 
  • 1/2 t. ground ginger
  • Pinch of ground cloves 

Instructions

  1. Add the nuts, dates and cookies to the food processor and process for 3-5 minutes until the mixture starts to clump together. 
  2. Add the molasses and spices and blend for one or two more minutes until ingredients look evenly distributed. 
  3. Using your hands, roll the mixture into desired “bite” sized balls. Store in the refrigerator. 

Notes

For a more festive bite, mix 1 c. powdered sugar with a splash of milk and vanilla and green food coloring. Dip bites into the frosting and garnish with sprinkles!
