This honey garlic roasted shrimp recipe is in honor of my sous chef, Chef Jack. He loves shrimp. And, the other night I grilled some shrimp and tossed it in an herb yogurt sauce. Well, I guess that ruined it for him. So, I promised him a re-do, and this is the recipe. He loves the combination of sweet and salty. But, as any good sous chef knows, he has to balance out the honey and soy with something fresh and herbaceous – hence the addition of lemon and garlic. We found this honey garlic roasted shrimp to be the perfection combination, and we hope you feel the same way!
In a medium bowl, whisk marinade ingredients together: lemon, olive oil, lite soy sauce, honey, and garlic
Add shrimp and stir well to coat. Cover with plastic wrap and marinate in the fridge for 1 hour, stirring occasionally.
Preheat oven to 450˚F. Transfer shrimp to a baking dish large enough to hold shrimp in a single layer. Bake uncovered until firm (8-10 minutes).
Garnish with chopped parsley and lemon zest.
