Last weekend, when I crossed my hometown border of Tennessee, this plant-loving girl started craving BBQ chicken sliders topped with slaw. Growing up, there was a drive-thru BBQ restaurant next to my gymnastics center. After weekend four-hour long practices, nothing tasted better than that BBQ chicken slider with coleslaw washed down by lemonade.
Are you a slaw or no slaw BBQ sandwich kind of person? I happen to love the fresh, acidic crunch my sandwich, so I did my best to create a short-cut version, with of course, a health kick.
Trader Joe’s Short-Cut Ingredients
For this recipe, I used two of Trader Joe’s products: their Broccoli & Kale Slaw and their Carolina Gold BBQ sauce. The Broccoli & Kale Slaw is a complete salad kit, which includes dried fruit, slice almonds, sunflower seed and a sweet and creamy dressing.

Any BBQ sauce in this recipe would do, but I chose the Carolina Gold BBQ sauce because I prefer a rich mustard flavor in my sauce.
A Healthier Twist on a Southern Dish
To lower added sugars in the included slaw dressing, I used half the dressing and added 2 Tbsp. rice wine vinegar, a generous drizzle of olive oil and 2 Tbsp. plain greek yogurt. To reduce the added sugars on the BBQ sauce, I diluted the BBQ sauce with a 1:1 ratio of low-sodium vegetable/chicken broth.
You will likely have extra slaw, which I happily enjoyed for lunch topped with tofu and blueberries. Cook once, eat twice. Yes, please!
