Instant Pot BBQ Chicken Sliders with Slaw

BBQ Chicken

  • 11.5 lbs. chicken breast
  • 1 c. low sodium chicken/vegetable broth
  • 1 c. Trader Joe’s Carolina BBQ Sauce

Broccoli & Kale Slaw

  • 1, 11 oz. package Trader Joe’s Broccoli and Kale Slaw
  • 1/2 package included dressing
  • 1 package dried cherries, blueberries, slivered almonds & sunflower seeds
  • 2 T. rice wine vinegar
  • Drizzle of olive oil
  • 2 T. plain Greek yogurt

Whole-wheat slider buns or pretzel buns


Instant Pot BBQ Chicken

  1. Place the ingredients in the instant pot in this order: chicken/vegetable stock, chicken, and BBQ sauce.
  2. Place the lid on the instant pot making sure the valve is in the sealing position. Press manual (high pressure) and set to 15 minutes. Let the pressure naturally release for 10 minutes. Shred and set instant pot on saúte while you shred chicken to soak up sauce.

Broccoli & Kale Slaw

  1. In a medium-sized mixing bowl, combine the slaw with ingredients and massage kale with your hands until throughly mixed and slightly wilted.
  2. Toast or warm slider buns and top with chicken and slaw.
