World Pistachio Day is February 26, and there is no better time to celebrate than during National Heart Health Month! Nutrition research shows that people who regularly eat nuts are less likely to have heart disease complications compared to those who rarely eat them. In addition, to heart-healthy fats and being rich in fiber, pistachios are one of the highest protein snack nuts. They offer six grams of plant protein per serving that help fuel your body with essential amino acids.

We thought we’d celebrate with a recipe round-up of all our pistachio recipes!

Halos Pom Pom Power Salad Bowl with Creamy Citrus Pistachio Salad Dressing

I love power salad bowls because the combination of ingredients (greens, grains, veggies, fruits and healthy fats) pack in a variety of textures and flavors that fill me up both physically and mentally. And, if we want healthy habits to stick, it’s important to check both of those boxes!

Pistachio and Dried Cherry Energy Bites

Salty meets sweet tart tangy in these pistachio and dried energy bites with chocolate chips. It’s a cheaper energy eat compared to store-bought bars. And, they’ll keep for weeks in the fridge! However, ours didn’t last that long…

Basil Pesto with Pistachios

Sometimes I forget how much I appreciate this basil pistachio pesto. Not only can the spread itself have several variations, but just a dollop of pesto can elevate the ordinary scrambled eggs or everyday turkey sandwich.  Traditional pesto calls for garlic, pine nuts, Parmesan cheese, and basil; however, you can sub in different greens, nuts or cheeses.

No Bake Chocolate Nut Bars

I love these bars for so many reasons:

  • Package-free, less nagging to get them to pick up wrappers left in your car
  • The perfect combo of sweet and salty but secretly healthy
  • High-fiber fruits plus healthy fats help stave off pre-dinner hunger and/or serve as the ideal pre-game fuel
  • You only need a food processor or blender
  • Who doesn’t love a “no-bake” recipe?
