I just wrapped up a quarantine birthday, and now I get to look forward to a quarantine Mother’s Day. Let’s just say, the key to day-of happiness is managing expectations. Spouses, are you ready? Virtual-ize It

Virtual reality is real. We can raise our virtual bar with intentional celebrations, such as sending gifts ahead of time and opening them once you’re “together” on video. I’ll be brunching virtually with my mom and sister, and one way we’re aiming to elevate the experience and connection is to share recipes. Here are a few recipes on our short-list we’ll be sharing:

Board It 

Have you heard of brunch boards? 2020 is the year of the board! A brunch board is a way of serving food where all brunch items like bagels, breakfast meats and mini quiches are in one accessible place.
One of the many things I love about brunch boards is that it can serve as an in-home activity that all members of the family can participate in. I’m planning on a few simple recipes like pancakes, yogurt parfaits and fruit kabobs that my boys can help make.

 Toast It

It wouldn’t be brunch without a festive mimosa to toast to mom. The great thing about ALDI is that many wines are under $10. I’ll be mixing up a customized mimosa with Orange Mimosa, a splash of club soda and fresh fruit.
