Vegetarian Sauerkraut Sandwich

Ingredients

Scale
  • 2 slices sourdough bread
  • 3 T. hummus
  • 3 T. sauerkraut
  • 2 slices of swiss cheese

Instructions

  1. Preheat oven to 450 degrees F.
  2. Spread hummus and distribute over the slices of bread.
  3. Distribute the sauerkraut over the hummus on each slice.
  4. Distribute the cheese slices over the sauerkraut.
  5. Bake in the oven for 6-8 minutes, then flip the sandwiches and bake about 6 minutes more, until the sandwiches are golden brown and crispy. (Alternatively, you can grill them on the stove top on a griddle or in a skillet).
