Spinach Pistachio Pesto

Ingredients

Scale
  • 8 c. spinach
  • 1/4 c. pistachios, shelled
  • 1/4 c. extra virgin olive oil
  • 1/4 c. parmesan or feta cheese
  • 1 large lemon (all the juice!)
  • 23 garlic cloves
  • 1 t. honey
  • 1/4 t. salt

Instructions

  1. Blend all ingredients in a food processor or blender until you have your desired consistency. We like it to have just a bit of a crunch factor!
