Ingredients
Scale
- 2 c. cashews, whole & salted
- 1/3 c. walnuts
- 1/2 c. gingerbread cookies
- 1 c. dates (about 16 whole)
- 1/8 c. molasses
- 1 1/2 t. ground cinnamon
- 1/2 t. ground ginger
- Pinch of ground cloves
Instructions
- Add the nuts, dates and cookies to the food processor and process for 3-5 minutes until the mixture starts to clump together.
- Add the molasses and spices and blend for one or two more minutes until ingredients look evenly distributed.
- Using your hands, roll the mixture into desired “bite” sized balls. Store in the refrigerator.
Notes
For a more festive bite, mix 1 c. powdered sugar with a splash of milk and vanilla and green food coloring. Dip bites into the frosting and garnish with sprinkles!
