Mom’s Mediterranean Turkey Burgers

Ingredients

  • 2 T. olive oil, divided
  • ½ red onion, chopped
  • 2 cloves garlic, minced
  • 1 lb. ground turkey breast
  • 1 c. fresh spinach, chopped
  • ¼ c. feta cheese, crumbled
  • ¼ c. panko breadcrumbs
  • 1 t. dried oregano
  • 1 T. fresh parsley (or ½ tablespoon dried)
  • ½ t. salt
  • ¼ t. ground black pepper
  • 4 whole-wheat hamburger buns, split

Instructions

  1. Warm 1 T. olive oil in a medium saucepan. Add chopped onions and garlic and sauté until slightly translucent.
  2. Let onions and garlic cool.
  3. In a mixing bowl, combine ground turkey, onions, garlic, spinach, feta cheese, breadcrumbs, lemon zest, oregano, parsley, salt, and pepper. Stir to combine with a spatula or use your hands to evenly combine everything together. 
  4. Transfer mixture to the refrigerator and let sit for at least 30 minutes, up to overnight. 
  5. Remove from the fridge and shape turkey mixture into 4 patties.
  6. Brush patties with remaining olive oil and grill until internal temperature of turkey burgers are 165 degrees.
  7. Toast the buns on the grill, if desired. Place a turkey patty on the bottom half of each bun and top with desired toppings and other side of the bun.
  8. Enjoy!
