Ingredients

- 2 T. olive oil, divided
- ½ red onion, chopped
- 2 cloves garlic, minced
- 1 lb. ground turkey breast
- 1 c. fresh spinach, chopped
- ¼ c. feta cheese, crumbled
- ¼ c. panko breadcrumbs
- 1 t. dried oregano
- 1 T. fresh parsley (or ½ tablespoon dried)
- ½ t. salt
- ¼ t. ground black pepper
- 4 whole-wheat hamburger buns, split
Instructions
- Warm 1 T. olive oil in a medium saucepan. Add chopped onions and garlic and sauté until slightly translucent.
- Let onions and garlic cool.
- In a mixing bowl, combine ground turkey, onions, garlic, spinach, feta cheese, breadcrumbs, lemon zest, oregano, parsley, salt, and pepper. Stir to combine with a spatula or use your hands to evenly combine everything together.
- Transfer mixture to the refrigerator and let sit for at least 30 minutes, up to overnight.
- Remove from the fridge and shape turkey mixture into 4 patties.
- Brush patties with remaining olive oil and grill until internal temperature of turkey burgers are 165 degrees.
- Toast the buns on the grill, if desired. Place a turkey patty on the bottom half of each bun and top with desired toppings and other side of the bun.
