Japanese Style Fried Rice with Tofu and Vegetables

Ingredients

Scale
  • 1 T. olive or sesame oil
  • 1, 10 oz. block of extra firm tofu, cubed
  • 1 T. teriyaki sauce
  • 1, 16 oz. bag Japanese Style Fried Rice with Tofu and
  • 5 oz. frozen mixed vegetables (we used 1/2 a bag of peas and carrots)
  • 1 c. low-sodium vegetable broth

Instructions

  1. In a large saúte pan, warm 1 T. oil over medium heat.  Add cubed tofu and saúte 4-5 minutes. Add 1 T. teriyaki sauce until tofu is well-coated and slightly browned (about another 3-4 minutes).
  2. Add fried rice, mixed vegetables and low-sodium vegetable broth.  Saúte until warmed through about 8-10 minutes.
