Asparagus fries are the perfect healthy, summer snack!
Ingredients
Breadcrumb Coating Mixture:
- 1 ½ cups of Panko
- 1 cup of Breadcrumbs
- 1 cup of Parmesan Cheese
- 1/2 tbsp. of Salt and Pepper
1 large bunch of Asparagus
2 cups of flour
2 beaten eggs
Instructions
1. Preheat oven to 425 degrees.
2. Cut off the tough ends of the asparagus.
3. Line a baking sheet with parchment paper and brush it with some oil.
4. Mix the ingredients of the breadcrumb mixture in a long rectangular shallow pan.
5. Place the flour in one container and the beaten eggs in another container. This is what will be used to adhere the breadcrumb mixture to the asparagus.
6. Dip each asparagus into the flour first, then the egg mixture, and finally the breadcrumb mixture.
7. Place the asparagus on the greased baking sheet and bake for 15 minutes at 425 degrees.
