McDaniel’s Short-Cut Recipe | Mediterranean Tuna Wrap

2 cans (6 oz) chunky light tuna in water, drained

½ red onion, diced

1 c. fresh parsley, chopped

¼ c. kalamata olives, chopped

½ c. tomatoes, diced 

3 T. olive oil

¼ c. lemon juice

1 t. lemon zest

¼ t. salt

t. black pepper

3 c. spinach, chopped

4 whole grain tortilla wraps


  1. Combine the tuna, onion, parsley, olives, and tomato in a mixing bowl.
  2. In a separate bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper. Add the dressing to the tuna mix.
  3. Add your tuna salad onto a whole grain tortilla wrap. Add spinach or your choice of greens, roll, and serve!
